Ingredients
  

Asian Omelete

  • 3 Eggs - scrambled
  • Half of a Chinese Sausage - cut into medium thickness slices
  • A small handful of pea shoots - wash
  • cheese - cut into small pieces
  • (Salt, pepper, mushroom seasoning to taste)

Fuzzy Melon and Sausage

  • 1 Fuzzy Melon - peal and cut into half-moon slices of about 3mm
  • 1 1/2 Chinese Sausage - cut into medium thickness slices
  • Xia Mi (Dried baby shrimp) - Add about a cup of hot water and let it sit for 5 minutes. Separate baby shrimp from the water. (water will be used later)
  • 2 cloves of garlic - Crushed and diced
  • A small pack of vermicelli noodles
  • (Salt, pepper, mushroom seasoning to taste)

Fuzzy Melon and Sausage

  • 1 Fuzzy Melon - peal and cut into half-moon slices of about 3mm
  • 1/2 Chinese Sausage - cut into medium thickness slices
  • Xia Mi (Dried baby shrimp) - Add about a cup of hot water and let it sit for 5 minutes. Separate baby shrimp from the water. (water will be used later)
  • 2 cloves of garlic - Crushed and diced
  • A small pack of vermicelli noodles
  • (Salt, pepper, mushroom seasoning to taste)

Instructions
 

Asian Omelete

  • heat up the Wok over high heat
  • add Chinese sausage and move it around (coats the pan in the flavor) and make sure both sides are evenly cooked. Remove from pan
  • toss in pea shoots for 30 seconds to a minute. You may add some salt here. Remove from pan.
  • add some vegetable oil to coat the bottom of the Wok. Once Oil is bubbling, pour in the scrambled eggs and lower the heat to medium heat. Don’t move the egg too much and allow it to cook thoroughly.
  • Once the egg is relatively cooked, add the sausage, pea shoots, and cheese and gently fold the omelet.
  • Allow the omelet to continue cooking for up to a minute under low-medium heat
  • I liked adding some Siracha for a little kick and we’re done!

Fuzzy Melon and Sausage

  • - heat up the Wok over high heat
  • - add Chinese sausage and move it around (coats the pan in the flavor) and make sure both sides are evenly cooked. Remove from pan
  • - Add in a little oil and once it’s heated, toss in the diced garlic.
  • - About 30 seconds after, add the slices of Fuzzy Melon. allow the fuzzy melon to cook 70% thoroughly and season to taste.
  • - Add Chinese sausage and baby shrimp.
  • - Add the shrimp water to help cook the melon more thoroughly.(can add salt to the shrimp water to evenly flavor the dish).
  • - add pack of vermicelli noodles to soak up the remaining water (quite flavorful!)
  • - allow noodles to cook throughly and the dish is complete

Fuzzy Melon and Sausage

  • heat up the Wok over high heat
  • Add minced pork (no need to add oil as there is oil in the meat) and let it cook till brown
  • add chinese cooking wine as it will reduce the meaty flavor
  • dd the sweet bean sauce and regular bean sauce and stir thoroughly
  • add onions and tofu
  • cook till onions are soft and this super easy dish is now ready!
