heat up the Wok over high heat
add Chinese sausage and move it around (coats the pan in the flavor) and make sure both sides are evenly cooked. Remove from pan
toss in pea shoots for 30 seconds to a minute. You may add some salt here. Remove from pan.
add some vegetable oil to coat the bottom of the Wok. Once Oil is bubbling, pour in the scrambled eggs and lower the heat to medium heat. Don’t move the egg too much and allow it to cook thoroughly.
Once the egg is relatively cooked, add the sausage, pea shoots, and cheese and gently fold the omelet.
Allow the omelet to continue cooking for up to a minute under low-medium heat
I liked adding some Siracha for a little kick and we’re done!
