Miso Tteokbokki #meiwok – Added a miso twist on the typical tteokbokki!

Ingredients
  

  • 2tbsp gochujang
  • 1tbsp miso
  • 1tbsp honey
  • 2tsp soy sauce
  • 1 clove minced garlic
  • 1.5c water
  • 3/4lb tteokbokki
  • cheese optional (I like mozzarella)

Instructions
 

  • Fry the kielbasa until browned, then remove and set aside. I find that there's plenty of fat in the kielbasa without adding any oil, but if your protein choice doesn't, feel free to add some oil here. Add the gochujang, miso, honey, soy sauce, minced garlic to the wok, followed by the water, and stir to combine. Simmer for a few minutes so the flavors meld together. Taste and adjust as needed. Add the tteokbokki and simmer for 3-5 minutes or until thickened and tteokbokki is soft. Stir so that the tteokbokki cooks evenly. Mix back in the kielbasa when nearly thickened. Remove from heat, top with cheese if desired, and serve.
