Ingredients
  

Stir Fry Cumin Lambserves 4 - 5

  • 1/4 tbsp baking soda
  • 1 tbsp salt
  • 2lbs lamb shank
  • 2 tbsp of ground cumin
  • 1 tbsp of chilli flakes your preference
  • 1/2 tbsp of roasted white sesame
  • 1 red bell pepper
  • 1/2 red onion
  • 1 piece green onion
  • cilantro
  • oil

Instructions
 

  • cut the lamb into small pieces (if it comes with a bone, debone it).
  • marinade the pieces in salt and baking soda for 20 minutes.
  • slice your onions, red peppers and green onions and put them to the side.
  • add oil to the wok, a reasonable amount to fry the beef.
  • fry the lamb until it's dry.
  • remove excess oil.
  • add a ladle full of oil to the wok, get the oil hot enough to extract flavour (low-medium just until you can see little bubbles).
  • add chilli's and cumin, fry for a couple of seconds.
  • add vegetables, fry for about a minute.
  • add lamb, toss, taste, plate.
  • add cilantro either on the bottom or top of the plate. up to you.
