- cut the lamb into small pieces (if it comes with a bone, debone it). 
- marinade the pieces in salt and baking soda for 20 minutes. 
- slice your onions, red peppers and green onions and put them to the side. 
- add oil to the wok, a reasonable amount to fry the beef. 
- fry the lamb until it's dry. 
- remove excess oil. 
-  add a ladle full of oil to the wok, get the oil hot enough to extract flavour (low-medium just until you can see little bubbles). 
- add chilli's and cumin, fry for a couple of seconds. 
- add vegetables, fry for about a minute. 
- add lamb, toss, taste, plate. 
- add cilantro either on the bottom or top of the plate. up to you.
