During Chinese New Year, nut cookies are very common in Singapore. There are many recipes and this is mine. I basically created  standard recipe that is suitable for any kind of nuts. Just replace the nut powder (nuts grounded) with the kind of nut you want to use. Common in Singapore are peanut, cashews, pistachio, almonds, dried peas and walnuts. I think sesame will be nice as well, but I have not tried it.

Asian Nut Cookies

Course Snack

Ingredients
  

  • 250 g salted butter
  • 160 g icing sugar
  • 300 g self-raising flour
  • 60 g cashew nut powder
  • 1 egg yolk
  • 85 cashew nuts for topping

Instructions
 

  • Heat oven to 160C.
  • Cream butter and icing sugar until pale yellow.
  • Mix in 1/2 the egg, cashew nut flour and self-raising flour.
  • Shape the dough into rounds of 5 to 7 g each.
  • Brush the top with the remaining egg.
  • Top with the nut.
  • Bake for 20 minutes or until light brown.
  • Keep the cookies in an air tight container.
