These are so good and so fast to bake, I had to document it. I sort of improvised and got this, and it works perfectly. This recipe can be for soft or normal cookies, big or small. General rule, the bigger the cookie and the higher the temperature, the softer the cookie. You get the idea.

I make them in two different sizes and bites. For Daughter Who, it has to be soft cookies. So they are bigger (1 tablespoon per drop cookie), higher temperature (180C) and for a shorter period of time (10 to 12 minutes). For The Youngest One, it has to be crunchy cookies. The Famous Amos kind. So they are smaller (1 tsp per cookie), lower temperature (160 to 170C) and for about 15 minutes.

The best proportion of butter:sugar:flour:egg (in weight) should be 2:2:2.5:1. I tend to use less sugar than most cookies but I guarantee you they will taste the same as other cookies with double the sugar. The trick is in the butter: use salted butter and then add another pinch of salt. Salt makes sweet stuff even sweeter. Not sure if it is our psychology at play, but that’s the basic trick. 🙂

The best double chocolate chip cookies

Equipment

  • 1 Thermomix
  • 2 Cookie Sheets
  • 2 Table or tea spoons
  • 1 Wire rack for cooling

Ingredients
  

Cookie Dough

  • 250 g Salted Butter
  • 250 g Mix of Brown and Caster Sugar Any proportion, but if or 125g brown and 125g caster sugar
  • 2 nos Eggs
  • 320 g Self-raising Flour Substitute 40g with quality cocoa powder if desired
  • 1 tsp Salt or Sea Salt

Other toppings

  • 1 cup Quality Chocolate Chips
  • 1 cup Chopped nuts Walnut, macadamia, cashew, peanuts, pistachio.... anything or any combination!

Instructions
 

Cookie Dough

  • Preheat oven at 170C.
  • In the thermomix, place fridge cold butter with sugar and beat until pale. I used #5 for about 2 minutes.
  • Add eggs one at a time to the mixture.
  • Add the flour. #3 for 2 minutes.
  • Add the nuts and chocolate chips. Use spatula to mix in.

Shaping Cookies

  • These are drop cookies, meaning you drop them into the baking sheets and they will spread to a round and then cook. Therefore, make sure the cookies are not too near each other.

Baking

  • Bake for 15 minutes or until the sides are golden brown.
  • Remove from baking sheet to a wire rack.
