LONDON FOG EGGY BREAD BRICK TOAST

Ingredients
  

  • Fruits of your choice
  • Confectioner's sugar, for dusting
  • 350 g Milk
  • 3pcs 54g Yolk
  • 4 Tea bags
  • 1 tbsp Honey + more for drizzling
  • 5 g Vanilla (I used paste, bean is also good, if using extract put more to taste)
  • Optional: ice cream, whipped cream, sugar in the raw/cane sugar, nuts for texture

Instructions
 

  • Heat milk with vanilla and tea, infuse 5min or until your desired strength. Take care not to oversteep! If you like seeing flecks of tea in your sauce, you can use loose leaf or open up your tea bags.
  • Heat dairy again until just under a boil, whisk sugar and egg yolk together. Temper.
  • Heat anglaise, constantly stirring, until it reaches around 82C. Immediately take off heat and strain out tea(bags), pushing to extract maximum liquid.
  • I added honey to taste, but if you're happy with it then just press clingfilm to the surface to avoid forming a skin and set it aside! The taste should be quite strong.
  • (You can also add a little butter (~5g maybe) and blend it in with an immersion blender for a richer taste.)Preheat your wok to medium-high heat.
  • Cut out your block of bread-- straight down, and then about 1/3 inch from the bottom crust. 0.5" cubes are good. You can also cut batons if you prefer.
  • Toss in a portion of your anglaise (leaving some aside to use as a sauce later) and fry in a bit of butter, turning until all sides are golden brown. Cast iron heats quite evenly, feel free to space your bread up the sides! Your anglaise is already cooked, so no need to worry about internal doneness. If you like, you can sprinkle the cooked bread with some sugar in the raw for extra sweetness and texture.
  • If you're planning to eat your bread box, I recommend buttering the inside, toasting (in an oven or toaster oven), and sprinkling with sugar in the raw!
  • Prepare your garnishes; since it was what I had on hand, I used banana, blueberries, and macadamia nuts. You can also add ice cream or whipped cream for an extra treat. Layer components inside to your liking, dust with icing sugar, scoop ice cream, drizzle anglaise/honey/etc, and I hope you enjoy!
