The Simplest Vegetables Dish

I have no clue what to call this in English. We call it 油菜 or “oil vegetables” but when I Google translated it, it says “Rape”.
Basically, we cook this so often we take this for granted.
A good plate of this greens must look bright green, not yellow, and still crunchy and juicy. Even our pickiest eater loves this.
Here’s the breakdown and secret to achieving the most delicious, simple plate of this dish. It is not stir fried, but boiled.
  1. Your water must be heavily salted and with a good layer of cooking oil. Say, 1 liter of water with 1.5 tablespoonful of salt and 2 tablespoons of oil.
  2. When the water is boiling, throw in the washed veggies. Any greens: mustard plant, kailan, broccoli, asparagus and anything you feel like or happen to have. Your veggies will turn bright green and shiny once they are ready.
  3. Boil about 4 minutes for broccoli but for the rest, about 1 to 2 minutes. Do not overcook.
  4. Remove and plate. Make it look good!
  5. Drizzle a sauce. The easiest is oyster sauce mixed with double its volume of stock.
  6. Make a topping.
  7. The topping is normally fried shallots and/or fried chopped garlic.
*You may add mushrooms, 发菜( those mushrooms that look like hair), other veggies or proteins, doufu. Hundreds of dishes can be created from this basic dish. Your imagination is the limit.
