It’s so fun to put fruits into a dish. I wasn’t sure how I came up with the lychee & strawberry combination, but the outcome was a nice surprise. Most of the time when I can’t sleep, I think about FOOD!!! There are so many imaginary dishes in my head…yes, I’m not kidding you…many of my dishes come out of my dream!
Dish #2 Lychee Strawberry Chicken Drumming (Drumettes & Wings)

Ingredients
  

Ingredients for 2-3 servings:

  • 10-12 strawberries (3 for plating)
  • 10 lychees
  • 6 chicken drumettes
  • 6 chicken wings
  • To marinate the chicken pieces:
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp white pepper
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch

Sauce:

  • 3-4 garlic cloves, minced
  • 1 tbsp shallots, thin sliced
  • 3 tbsp lychee juice
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tbsp vinegar
  • 1 tbsp plum sauce (optional)

Instructions
 

  • Marinade the chicken pieces with salt, sugar, white pepper, sesame oil, and cornstarch for 15 mins.
  • Put a little oil (about 2 tbsp) into the Mei Kitchen wok. Fry the chicken pieces until they turn golden brown. Make sure the inside of the chicken pieces is well cooked. Remove them and set them aside.
  • Wash the wok and return to the stove. Heat a tablespoon of oil and fry the garlic and shallots for a minute. Then stir fry the strawberries and lychees together for another minute. Put the lychee juice, salt sugar vinegar, and plum sauce (optional) into the mixture. Stir fry it for another minute.
  • Plate the chicken pieces and pour the sauce on the top. If you’re a little playful like me, then put a couple of strawberries for decoration.
  • That’s it. So easy and playful. Enjoy!
