This must be my new favourite recipe, because it is super easy to make. It is basically a bowl of rice with fish and vegetables scattered on top.
I just make a simple Japanese omelette and added some toppings! So after the rice is cooked, it just takes 5 minutes to get this fixed.

I had just gone to the fishery and bought some really fresh fish. Normally, I would make some Singapore-style raw fish salad, and also some sashimi and sushi. But I couldn’t find my rice vinegar for the sushi and I only had salmon and nothing else. So I became lazy and made chirashi instead.

To make a Japanese omelette, all I did was add a bit of sugar and salt to 2 eggs like the video below:

After that, I scattered the cut fresh salmon and then the omelette, some rice toppings and toasted sea weeds and sesame seeds.
It tastes wonderful with some miso soup, and with some seven flavoured spices (唐辛子) or Japanese hot raddish – wasabi (山葵) and that’s it!

Super delicious, fast and cheap!

Ingredients
  

  • 6 cups cooked sushi or short grain rice cooked from 3 cups of rice grains
  • Japanese Egg Omelette
  • 2 medium eggs Make omelette following video
  • A pinch salt
  • A pinch sugar
  • Toppings
  • 1/2 jar rice toppings
  • 1 tbsp scallions
  • 1/4 medium red onion sliced
  • Accompaniment all optional
  • A sprinkle shichimi togarashi
  • A bit wasabi
  • Some soya sauce
  • Some preserved ginger normally pink ones

Equipment

  • rice cooker or pot

Instructions
 

Japanese Omelette

  • Mix the sugar and salt to the eggs and beat well.
  • I don't have a square pan, but I do it the same as the video above. It works.
  • Cut into strips or anyway you like!

Combine

  • Scoop a cup of rice into a Japanese bowl.
  • Scatter or arrange fish, omelette, and all the toppings on the rice.
  • Serve with the accompaniment.
