Banana and Cranberry Bread

Ingredients
  

  • 250 g Unsalted butter
  • 180 g Brown Caster Sugar or Raw Caster Sugar
  • 1 teaspoon nutmeg ground
  • 1 teaspoon Vanilla essence
  • 5 eggs
  • 2 bananas mashed
  • 1/2 cup cranberries soaked
  • 350 g self-raising flour

Instructions
 

  • Preheat oven at 170C.
  • Cream and butter and sugar until almost white.
  • Add the nutmeg powder and vanilla essence.
  • Emulsify eggs one at a time. Add a little flour if there's difficulty.
  • Add the bananas and mix well.
  • Pour in the flour and cranberries and mix just enough to even and do not overmix.
  • Bake for one hour in a middle rack.
