Cut out the older and tougher bits of the spinach, wash and submerge in water for a while to remove the dirt. If the spinach is too long, cut into smaller pieces
Pour oil into the wok and fry garlic till slightly golden
Put all the spinach in, stir fry for a bit then pour in water and toss in chicken powder and a sprinkle of salt, cover wok with lid
Once the spinach has wilted, give it a few tosses more on the wok and serve
