Traditional Black Forest Cake

Ingredients
  

Egg Yolk Mixture (Beat together):

  • 2 egg yolks
  • 50 g water
  • 50 g oil
  • 1/2 tsp vanilla
  • 1 TBsp pure cocoa powder
  • 50 g Optima flour
  • 50 g plain flour
  • 1/8 tsp soda.

Meringue

  • 2 egg whites
  • 1/8 tsp cream of tartar
  • 50 g sugar

Filling (cook until thickened)

  • 1 can pitted cherry in syrup.
  • 3 TBsp cornflour
  • Some lemon juice and sugar

Topping

  • 500 ml cream
  • 1 tsp vanilla
  • 1 TBsp icing sugar

Instructions
 

  • Fold in both mixtures.
  • Bake in 7 inch round pan.
  • 180°C about 35 min.
  • Cool completely.
  • Slice into 3 slices.
  • Mix all ingredients for filing and cook till thickened.
  • Stir in 1 tsp brandy.

Assemble cake

  • Put cream on first slice.
  • Put 1/2 of the cherry filling on cream.
  • Do the same for second slice.
  • Put only cream on third slice.
  • Decorate with choc and cherries.
  • Usually people use those preserved cherries but we prefer fresh ones. It's up to you.
  • Fridge overnight for flavour to meld.
