I use black chicken if I can find them

Salt/pepper to taste
Instructions
Soak the Tianma for 3 days until it is fully expanded. Cut into thick slices.
Scald the chicken with hot water to remove impurities and smell.
Put everything into a double boiler.
Steam for 1 hour.
