Mrs Lim’s Fried Chicken

Ingredients
  

  • 5 chicken deboned thighs
  • 1 Tbsp light soya sauce
  • 1 tsp pepper
  • 2 Tbsp rice flour
  • 1 small egg
  • 1 cup panko

Seasoning

  • Any mixture of:
  • Chilli powder
  • Turmeric powder
  • Coconut milk max 1 Tbsp
  • Curry powder
  • Ground Coriander and/or Cumin
  • Paprika
  • Ground Star Anise
  • Any spice you like

Oil

  • Enough vegetable oil for deep frying the chicken

Instructions
 

  • Heat the oil in a pan or pot to medium.
  • Season the chicken with soya sauce, pepper and spices for at least 20 minutes.
  • Add the egg and the flour.
  • Coat with the panko and fry till golden brown.
